Sushi is one of our favorite foods ever - so we had to do a version with apple cider vinegar and shrub! The rice is bright and the ideal base for your favorite toppings. This dipping sauce is perfect with a maki roll or two, but can also be shmeared on a sandwich or as an accompaniment to French fries.

This healthy sushi recipe transports you instantly to Japan. It's flavorful, full of digestive health benefits, and super versatile, too! Guaranteed to be a family favorite.
Ingredients

2 cups white Calrose rice

2 1/2 cups water

1/2 tablespoon water

1 1/2 tablespoons Apple State Vinegar

2 tablespoons cane sugar

1 teaspoon salt

1/4 cup mayonnaise

2 teaspoons HI Spice Turmeric Ginger Hot Sauce (or hot sauce of your choice)

1 teaspoon Shiso and Citrus Shrub

1/4 teaspoon garlic powder

Directions
For the Rice (*Tomo's Top Secret Perfect Rice*)
Rinse the rice with fresh water 4 or 5 times until the water runs clear.
Add the 2 1/2 cups of water to the 2 cups of rice and let the rice sit at room temp for 30 minutes.
Bring rice to a boil with lid in place. When it starts to boil reduce the heat to simmer and cook for 10 minutes.
After 10 minuets turn the burner to High for 10 seconds and then remove the pot from the stove and let it rest covered for 10 minutes.
In a small bowl mix the vinegar, sugar, salt and water. Thoroughly combine 3/4 of the mixture with the cooked rice.
Add more to your taste.
For the Dipping Sauce
Combine all ingredients.
Dip or drizzle and enjoy!
For the Sushi
There are many ways to roll sushi. Recently we went with a vegetarian version using pan fried tofu, red peppers and cucumber. Get creative and roll on!!
To make the pan fried tofu slice firm tofu into 1/4" x 1/2" sticks. With a non stick pan on medium heat, heat 3 tablespoons of vegetable oil. Place the tofu on the pan and sprinkle with salt. Slowly fry the tofu on one side for approximately 5 minuets. Flip sprinkle with salt and fry for another 5 minutes. Add more oil if needed.
