Halibut Ceviche with Apple State Vinegar
Sustainable fish and sustainable vinegar are a match made in heaven! This ceviche is fresh and full of bright flavor - and you don't even have to turn on your oven!
1/2 lb Halibut
1 cup Lime juice
2 Tbsp Apple State Vinegar
1/2 Large mango, cubed
12 Cherry tomatoes, quartered
2 Minced onions
2 Tbsp Minced cilantro
Dash of hot sauce
Salt and pepper to taste
Cover halibut with lime juice and refrigerate for 1 hour.
Drain lime juice and add all other ingredients.
Stir well and serve on tostadas. Enjoy!
