Inspired by Mediterranean cuisine, these beans are delicious, protein-packed, and full of bright, fresh flavor — perfect in a salad, a side dish, or just as they are!

Blue Zones are areas of the world renowned for the health and longevity of their residents. One commonality? Beans! Using some super local beans from our CSA, we made a bean salad that harnesses the power of the Blue Zones for a delicious and hearty dish.
Ingredients

1 cup dry beans (soaked for at least 8 hours)

1 tbsp of Apple State Vinegar

Handful of herbs, chopped (I used cilantro, but parsley would also be great!)

Half a red onion or shallot, finely chopped

Juice of half a lemon

5-6 olives, roughly chopped

Salt and pepper to taste
Directions
Soak beans overnight.
Rinse and add to pot. Cover beans with 2-3 inches of water. Bring to a boil, then simmer until done.
Drain and add to bowl. Add vinegar, herbs, onion, lemon, olives, salt and pepper, and mix well! Enjoy!
