Apple State Vinegar
We love this creative spin on BBQ sauce. It's a little sour, a little sweet, and a little spicy. Plus, raw apple cider vinegar helps support your digestive health and adds bright, juicy flavor.
Ingredients
-
1/2 Tbsp Extra virgin olive oil
-
1/2 Medium onion
-
1 Large clove garlic
-
1/2 lb Rhubarb
-
1/8 cup Tomato paste
-
1/2 cup Water (plus more as needed)
-
1 Tbsp Honey
-
1 Tbsp Soy sauce
-
1 Tbsp Apple State Vinegar
-
5 Tbsp Raspberry & Citrus Shrub
-
1/2 Tbsp Worcestershire sauce
-
1/2 tsp Dijon mustard
-
1/2 tsp Paprika or chili powder
-
1/2 tsp of your favorite hot sauce (we love HOSA!)
-
Salt and pepper to taste
Directions
Heat oil in a saucepan over medium heat.
Add onions and cook until golden, about 10 minutes.
Add garlic and cook until fragrant, about 1 minute.
Add rhubarb, tomato paste, water, honey, soy sauce, vinegar, Worcestershire sauce, mustard and spices. Bring to a boil and then reduce the heat to a simmer for at least 30 minutes, stirring occasionally, until the rhubarb softens and breaks apart.
Remove from heat and puree in a blender or food processor until smooth.
Add Shrub and stir.
