Ingredients

1.5 cups, grated carrot (2 large carrots)

1/3 cup, chopped cilantro

1/2 cup, minced green onion

8oz, rice noodles

1/2 block, firm tofu
-
1/8 cup, vegetable oil (for frying tofu)

1/2 cup, crushed peanuts

lime slices

2 tablespoons, tomato paste
-
2 tablespoons, Apple State Vinegar

4 tablespoons, soy sauce
-
1/2 teaspoon, toasted sesame oil

1 tablespoon, cane sugar
-
1 tablespoon, olive oil
-
1/2 teaspoon, garlic powder
-
1/8 teaspoon, chili powder

pinch, black pepper
The Sauce
Directions
Cut the tofu into 1/3 " x 1" sticks. Heat 1/8 cup of vegetable oil in a 12" skillet or non stick pan over medium heat. Once the oil is hot place the tofu carefully in one layer in the skillet. Season with garlic powder and salt. Do not turn for at least 7 minutes. Once golden carefully flip each piece to the other side (you may need a metal spatula or fork to loosen and flip). Add more oil if necessary and cook until both sides are golden.
Cook the rice noodles and then set aside in ice cold water while you prepare the veggies and sauce.
In a small bowl, combine the tomato paste, Apple State Vinegar, toasted sesame oil, soy sauce, cane sugar, olive oil, garlic powder, chili powder and black pepper together and stir well.
In a large bowl add the rice noodles and the sauce, mix well and then add the veggies and fried tofu. Stir well and you are ready to serve! Garnish each plate with a lime slice or add a squeeze to the finished dish.
