These roasted potatoes are a perfect addition to any brunch, game day, or snack situation.
Salt and Vinegar Potatoes
Apple State Vinegar
These have the flavor of salt and vinegar chips, but you can have them for brunch and still have the energy to go on a bike ride after!
2 lbs potatoes (Yukon Gold or Russet are great!)
2 tbsp olive oil
2 tbsp Apple State Vinegar
Salt and pepper
Any other seasoning your heart desires (I could see dried rosemary or thyme working particularly well here)
Preheat oven to 400°. Cut potatoes into one inch cubes and mix with salt, pepper, oil, and 1 tbsp of vinegar. Bake for 40-45 minutes, stirring occasionally, until potatoes are crispy and browned.
Remove from oven and transfer to mixing bowl. Drizzle with remaining 1 tbsp vinegar (or more if you’re into it!) and add more salt and pepper to taste. Bon appetite!
